1 lb green tomatillos, husked and rinsed
1/4 cup chopped white onion
2 cloves of garlic, minced
1 jalapeño pepper, seeded and finely chopped
1/4 cup chopped fresh cilantro
1 tsp salt
1/2 tsp sugar (optional)
Preheat your grill or broiler to high heat.
Place the tomatillos, onion, garlic, and jalapeño pepper on a baking sheet.
Grill or broil the vegetables for about 8-10 minutes, or until they are charred and tender.
Remove the vegetables from the heat and let them cool slightly.
In a blender or food processor, combine the grilled vegetables, cilantro, salt, and sugar (if using).
Pulse until the salsa is smooth, but still has a little texture.
Taste and adjust the seasoning if necessary.
