Not So Chicken Soup

Traditional ingredients with a twist, using the other white meat: Pork Loin.

Ingredients:

2 lbs boneless pork loin, grilled and diced
8 cups chicken or pork broth
2 cups diced carrots
2 cups diced onions
2 cups diced celery
2 cloves of garlic, minced
2 bay leaves
2 tsp dried thyme
Salt and pepper, to taste
Directions:

In a large pot or Dutch oven, bring the broth to a boil.
Add the grilled pork, carrots, onions, celery, garlic, bay leaves, and thyme. Season with salt and pepper, to taste.
Bring the soup back to a boil, then reduce the heat and let it simmer for 20-25 minutes, or until the vegetables are tender.
Remove the bay leaves and discard.
Taste and adjust the seasoning as needed.
Serve the soup hot.
Note that, as per your specific instruction, it calls for grilled pork loin which can have a different texture than the chicken. So you might want to adjust the time accordingly.
